mommy soup

i've been trying out different chinese mommy soups to eat with dinner. they're actually fairly easy to make; there's not that much prep, just hours of boiling and waiting. I used to make tons and tons of lentil soup and it was a huge effort just to chop and get all the vegetables and beans ready. mommy soup, you just have four ingredients that you just chop coarsely and throw in there; none of that mince or dice stuff. ::cheer::

anyways, here's one that i tried out the other day from a book entitled "Nutritious Soups for My Dearest Karen ~ from Daddy Mok." It's a collection of mommy soups that a dad (Daddy Mok, in case you couldn't tell) put together for his singer/actress daughter, mixed in with family anecdotes and pictures.


I rather like this recipe - I even skimped on some of the ingredients and it was still fairly good. It was kind of bland the first night that I made it, but when I reheated it the next night, it was 100% better! But again, the first night's blandness might just be attributed to the fact that I didn't use figs, had the wrong pears, and didn't have the bitter almonds. i guess that extra night of maturing in the fridge helped develop the soup and cover whatever ingredient deficiencies it had, but I suppose if i had just followed the recipe to begin with, then it would've tasted better on the first night. as a non expert, i probably really should not make mods to recipes like that, but oh well.

Lean Pork Soup with Apples and Pears

ingredients:

2 apples
2 ya - li pears
3 dried figs
38 g of sweet almonds
38g of bitter almonds
300 g lean pork
15 bowls of water
salt

method:
1. rinse all ingredients
2. core and cut apples into quarters. core and cut the pears into halves.
3. cut lean pork into four pieces. rinse and scald.
4. bring water to the boil. put all ingredients into a pot. cook over high heat for 20 minutes. reduce to low heat and cook for 1 hour. season with salt. serve.

functions:
this soup nourishes the lungs and strengthens internal organs. (score!) its nourishing quality makes it the perfect soup for all seasons. (neat)

wb alli! i <3 mom soups. i tried to make a chinese herbal chicken one and found it really helps the flavor to leave it in a slow cooker over night or throughout the day. this sounds yum =)
