dukbukki...but not

Hi All! (all...four of you haha)

I am always on the lookout for a good soba noodle recipe - one of my favorite lazy meals is to chop up some assorted vegetables (zucchini, carrots, onions, bell peppers, etc etc) and to stirfry it with soba noodles in some sort of teriyaki sauce, and it's good for like, three days!

Anyways, I found this recipe on smittenkitchen: spicy soba noodles with shiitakes. http://smittenkitchen.com/2007/08/so-good-soba/ I was feeling extremely frugal and didn't want to spring the three bucks to buy chili paste and decided to make do with the lee kum kee garlic chili sauce that I had at home.

*my noodles did NOT look like this haha

basically, i overcooked the cabbage, didn't have sesame seeds, and for some reason it was very very soupy at the bottom, which I'm not sure is supposed to happen, but because the picture above feels distinctly arid, I think i messed up there too. I also think that not having the correct chili paste was also a strike.

But whatever, it's food, it's edible, i moved on and ate it.

yesterday I was really craving football noodles:

, so I decided to use those football noodles in the soba recipe and see what happened. I even sprung to buy the korean chili paste (gochujang) and went to town.

I think I cooked the football noodles wrong because they came out super pasty and sticky. Also, the chili paste was really overwhelming; I think the soba noodles work better with it because it kind of has that nutty flavor that counteracts the spiciness better. These football noodles just absorb the sauce like a sponge. Like a sponge!

Basically, I made a less sophisticated dubukki

with some random stuff in it. Which is fine, but that's not really what i was going for haha. i guess my conclusion is that this is probably better with soba noodles.

cooking is a learning process. i had to learn substituting things just isn't the same the hard way too. apparently adding lots of chili black bean sauce is not a shortcut for cutting real chilies and adding regular black bean sauce. super spiciness! -.-
