roast chicken

today i schlepped it over to bed bath and beyond during lunchtime because i couldn't get it out of my head that if i was going to bring gravy to a potluck with the mashed potatoes, i would have to make it by scratch and by golly if i was going to make it i needed pan drippings and the way to get pan drippings is by roasting meat but buzzfeed said that the best roasted chicken recipes used a roasting rack but i didn't have one so really, my only choice was to walk in strong rain with my coworker's golden gate fields umbrella and get one.

all that to say, thomas keller has a lovely and very simple roasted chicken recipe. you just need to make sure your chicken's at room temp before you cook, and make sure the chicken is very dry on the outside. salt and pepper, truss, salt and pepper again, and an hour later, dinner is served! i was going to try brining the chicken, but it seemed like a lot of steps (make brine, soak chicken in brine solution for about a day, dry out the brined chicken in the fridge for another day). the zuni cafe chicken looks very tasty too but it takes a couple days of lead time also.

as for the roasting rack, the instructions said that it could only withstand oven heats of up to 425 degrees, which is problematic when the recipe calls for 450. again, i was going to schlep it out in the rain and see if target had other options but i decided to try using the wire rack that comes in our toaster oven and it turned out more than fine.
