salisbury steak

growing up we mostly ate dinner at home, but once in a glorious while, my mom would make a stop in the frozen foods aisle and pick out TV dinners for the four of us. my parents would get hungry man entrees, and my brother and i would get kid cuisines, which always came with a little square of brownie or apple crisp. we cheered when that happened and would press our faces against the oven door to watch them "cooking."

when i got to college i ate a lot of hideous food, namely mac and cheese with peanut butter and sriracha mixed in, instant ramen of all forms, and lots of dinosaur shaped nuggets. one of my favorite favorites though was the salisbury steak meal, which looks nothing like a proper steak. it's essentially a hamburger patty with a brown sauce, paired with mashed potatoes and corn:

so good. i even bought the 10 for $10 kind, so it's not like i was shooting for the more "gourmet" of the tv dinners. i'd make fresh rice, scoop it over the "meat," and enjoy a really fantastic evening alone with a milk tea and tv. life, to its fullest.

i came across a recipe for salisbury steak in my pressure cooker cookbook (by the way, why doesn't EVERYONE have a pressure cooker? saves me a ton of time - chicken dinner in ten minutes? yes!) and decided to take it for a spin. basically ground beef with chopped onions and crushed crackers mixed in with a mushroom/Worcestershire sauce, atop small red potatoes. fairly tasty, but really, there's no beating those Banquet meals...!
